Easy Peasy Fudge

Yesterday I had to finish up a handbag. The handles, to be specific. I hate making handles/straps/etc. I don't know why. So, to delay the inevitable, I decided to clean out the microwave. Then I did the dishes, and cleaned the kitchen, and straightened up a bunch of stuff. I wanted something else to procrastinate with, so I decided to make some fudge. The easiest fudge ever, mind you. It's not boardwalk quality by any means, but it's still yummy and quick to whip up if you need some sweets. This is probably the only recipe you will ever see here on this blog, as the culinary arts are lacking in my genetic makeup (which isn't fair because my mother is the most amazing cook ever). This stuff is super easy to make, and you don't really need pictures but I took them anyway, so let's go :)


You need: one 16 oz. of cake frosting, one 12 oz. bag of chips, a little bit of salt, and an extract (I used vanilla, but now wish I had used mint - I loooooove creamy mint fudge). You can use any combination of chips and frosting, but I'm using vanilla for both.


Melt your chips. I stuck the bowl in the microwave at 30-second intervals and gave it a stir until it was nice and creamy smooth like the photo above.


Add in your frosting and stir. At this point, I added in a half teaspoon of vanilla extract. You can use almond, mint, whatever. I also added in a quarter teaspoon of salt to tone down the sweetness.


Lightly grease a 9x9 pan and pour in your 'fudge,' spreading it evenly around. If you want to, add some sprinkles now. Then stick it in the fridge for at least an hour to set. 

Cut it into squares. Put it in a container, and store it in the fridge (it'll keep for about a week).

  4. I've been making that same recipe for many years. It's VERY versitile but WOW, is it ever rich. You really want to cut it into very small pieces. I found the recipe after finding it in a cookbook I'd gotten inside a huge box of cookbooks I bought at an estate sale.
    If you want to click this link this is a thread I created on a message board of a very wonderful machine embroidery digitizer. I posted a number of recipes in that section of the message board. Anyway, the very first one in this thread for candy I've made is this recipe but a Christmassy one called "Peppermint Swirl Fudge". It is very good and extremely popular by anyone who has ever tasted it. I don't know how many times I've given that recipe out. Try it this way once and heed the warning if you use the peppermint oil. Peppermint oil is VERY strong so you need only a tiny bit. Trust me. If you use too much you will not need mouthwash for about a week. LOL

  6. ooh sounds good but i take very little dairy - Chinese genes. i eat a slice of cake once in a while tho' but nothing creamy.
    ah i dislike making handles too. i would make another bag just to avoid making the handles.
